COOKING TIPS:

HERB CRUSTED PRIME RIB

This modern technique is sure to impress.

For this recipe you will need a prime rib of your weight choosing, we like to use 4-7 pounds, and we recommend cooking it at 275 Degrees for 20 minutes per pound until 127 degrees is achieved internally at the core, use a nice digital thermometer.

To start we recommend lightly searing your prime rib on a large cast iron or flat-top style griddle to sear and caramelize your meat thoroughly around to encapsulate moisture and flavor by creating a crust around the outside.

Once your oven is preheated you will be able to start slowly roasting your prime rib. We recommend seasoning with salt and pepper for this recipe.

Once your prime rib has reached an internal core temperature of 127 degrees you will pull your prime rib to rest.

Meanwhile, you rest your prime rib you will be beating egg whites until light peaks, once made you will brush on egg whites and adhere a seasoned and herbed panko bread crumb to your prime rib.

We recommend about 2 qtrs. of panko bread crumb that will be seasoned with a little olive oil, micro planed garlic, salt, fresh rosemary, and parsley; we like to run it through a food processor lightly to help incorporate all flavors.

Taste your bread crumbs and adjust as needed.

Once your prime rib is seasoned with your bread crumb evenly go ahead and put it into a 320-degree oven to lightly toast your breading and cook your egg white.

Allow 5-10 minutes of resting time before you begin to slice your prime rib.
